Preparation
- Set your oven to 350°F (or 175°C) and let it heat up.
- Cook the beef and onion together in a big skillet until the meat is cooked through. Drain off any grease left behind.
- Add the taco seasoning and beans to the skillet, stirring until it’s evenly mixed and warmed up.
- Combine the mushroom soup and sour cream in a bowl. Stir it together until smooth.
- Take half the soup mix and spread it across the bottom of your chosen baking dish.
- Place tortillas over the soup layer, tearing them into pieces to cover completely.
- Spoon half of the beef and bean mixture on top, then sprinkle about a cup of cheese over everything.
- Repeat the process, ending by sprinkling the last of the cheese on top.
- Pop it into the oven for 20 minutes, or just until the cheese is melted and bubbling at the edges.
Serving
- Once your Layered Burrito Casserole is ready, take it out of the oven carefully. Let it sit for a few minutes before serving.
- Cut it into squares and dish it out on plates. It goes well with toppings like salsa, guacamole, or even a sprinkle of fresh cilantro.
Storage & Freezing
- If you have leftovers, you can store them in an airtight container in the fridge for up to 3 days.
- To reheat, simply put it in the microwave or back in the oven until it is hot.
- If you want to freeze the casserole, wrap it tightly in plastic wrap and then in aluminum foil. It can be frozen for up to 3 months.
- When you are ready to enjoy it again, let it thaw in the fridge overnight before reheating.

You can customize this casserole with your favorite toppings and ingredients such as black beans, jalapeños, or extra cheese.
