- In a bowl, mix the almond flour, coconut flour, salt, and baking powder together.
- Add the olive oil and gradually mix in the water until a dough forms.
- Divide the dough into 5 to 6 equal portions and roll them into balls.
- Place each ball between two sheets of parchment paper and flatten it using a rolling pin or your hands.
Cooking
- Heat a skillet over medium heat and cook each tortilla for 1 to 2 minutes on each side until golden and slightly crispy.
- Serve warm.
Notes
For meal prep, store tortillas in an airtight container in the refrigerator for up to a week. For longer storage, freeze them between parchment paper.
