  • 1 cup almond flour
  • 2 tablespoons coconut flour
  • 1 teaspoon salt
  • 1 teaspoon baking powder
  • 1 tablespoon olive oil
  • 1/2 cup water

Preparation
  1. In a bowl, mix the almond flour, coconut flour, salt, and baking powder together.
  2. Add the olive oil and gradually mix in the water until a dough forms.
  3. Divide the dough into 5 to 6 equal portions and roll them into balls.
  4. Place each ball between two sheets of parchment paper and flatten it using a rolling pin or your hands.
Cooking
  1. Heat a skillet over medium heat and cook each tortilla for 1 to 2 minutes on each side until golden and slightly crispy.
  2. Serve warm.

Notes

For meal prep, store tortillas in an airtight container in the refrigerator for up to a week. For longer storage, freeze them between parchment paper.
