Preparation
- Preheat the oven to 350°F (175°C) and line a muffin tin with paper liners.
- In a mixing bowl, combine almond flour, Parmesan cheese, chives, baking powder, salt, and pepper.
- In a separate bowl, whisk together the eggs and melted butter.
- Pour the wet ingredients into the dry ingredients and mix until well combined.
- Divide the batter evenly among the muffin cups, filling each about 3/4 full.
- Bake for 20 to 24 minutes or until the muffins are golden brown and a toothpick comes out clean.
- Let cool slightly before serving warm or at room temperature.

Store muffins in an airtight container in the fridge for up to five days, or freeze for up to three months.
