  • 1/2 cup coconut flour Adds texture and flavor.
  • 1/2 teaspoon salt
Wet Ingredients
  • 2 large eggs Binds the ingredients.
  • 1/4 cup water Adjust for consistency.
  • 1 teaspoon olive oil Adds richness.

Method
 

Preparation
  1. In a large bowl, combine almond flour, coconut flour, and salt.
  2. Add the eggs and olive oil, mixing well until combined.
  3. Gradually add water, mixing until the dough comes together and is no longer sticky.
  4. Divide the dough into small balls, about the size of a golf ball.
Cooking
  1. Roll each ball into a thin circle using a rolling pin.
  2. Preheat a skillet over medium heat and lightly grease it if necessary.
  3. Cook each tortilla for 2-3 minutes on each side, until golden and cooked through.
  4. Keep the tortillas warm and serve immediately.

Notes

These tortillas can be stored in an airtight container in the refrigerator for up to one week, or frozen for up to three months. Serve with proteins and vegetables for a balanced meal.
