Preparation
- Make the cold foam by adding heavy cream, whole milk, and mocha sauce to a small glass or mason jar and froth for 20-30 seconds until foamy. Set aside.
- Sift matcha powder using a fine mesh strainer and whisk it with hot water until smooth. Set aside.
- Add ice to a tall glass.
- Stir milk and pistachio sauce together until no clumps remain, then pour over the ice.
- Add the matcha mixture and stir until combined.
- Top with the chocolate cold foam and toasted Kataifi if desired. Serve chilled.
Notes
For a healthier version, use low-fat milk and sugar-free syrup. For high protein, add whey protein to the pistachio milk. Best served fresh, do not freeze the cold foam.
