Ingredients
  

For the Matcha
  • 3 tablespoons hot water Use boiling hot water
  • 1.5 teaspoons pure matcha powder Make sure to sift for smoothness
  • 1 cup milk of choice Can use low-fat or plant-based milk
  • 2 tablespoons heavy cream For cold foam
  • 1 tablespoon whole milk For cold foam
For the Strawberry Puree
  • 1/4 cup chopped fresh strawberries Fresh strawberries work best
  • 1 tablespoon granulated sugar Can substitute with low-carb sweetener
  • 1 tablespoon cold water To help blend the strawberries
For Serving
  • 2 tablespoons raspberry syrup Choose a low-sugar version if desired
  • ice Ice for serving Use to fill the serving glass

Method
 

Preparation of Matcha
  1. Add the hot water to a microwave-safe jar or glass, and heat until boiling (30-45 seconds in the microwave).
  2. Sift the matcha into the hot water, removing any large clumps.
  3. Whisk the matcha and water together until smooth and slightly foamy.
  4. Stir in the milk, then set aside.
Preparation of Cold Foam
  1. Add the heavy cream, raspberry syrup, and whole milk to a small glass or jar.
  2. Froth with a milk frother for 20-30 seconds until foamy. Set aside.
Preparation of Strawberry Puree
  1. Add strawberries, granulated sugar, and cold water to a high-speed blender.
  2. Blend until smooth.
  3. Pour into a glass over ice.
Assembly
  1. Slowly pour in the matcha milk to layer it on top of the strawberry puree.
  2. Top with the raspberry cold foam.
  3. Enjoy your drink!

Notes

For a healthier version, use unsweetened milk and replace granulated sugar with a low-calorie sweetener. Store leftover berry puree for up to 3 days in an airtight container.
