Ingredients

Main Ingredients
  • 1.5 lbs carrots (whole or rainbow), peeled and sliced evenly
  • 2 tbsp unsalted butter Provides richness and helps brown the carrots.
  • 2 tbsp honey Adds sweetness and creates a glossy glaze.
  • 2 cloves garlic, minced Provides aromatic flavor when sautéed.
  • 0.5 tsp salt Enhances sweetness and balances the glaze.
  • Chili flakes For a spicy kick, optional.
  • Fresh herbs (like thyme or parsley for garnishing)
  • Lemon zest Adds brightness.
  • Toasted nuts (for crunch and texture, optional)

Method

Preparation
  1. Preheat your oven to 400°F (200°C). This temperature will help the carrots roast perfectly, becoming tender and caramelized.
  2. Peel the carrots and cut them into evenly sized pieces, either in rounds or sticks.
Making the Glaze
  1. In a mixing bowl, combine the melted unsalted butter, honey, minced garlic, and salt. Whisk these ingredients together until well-blended.
Roasting the Carrots
  1. Line a baking sheet with parchment paper. Spread the sliced carrots evenly on the sheet.
  2. Drizzle the honey garlic glaze over the carrots, ensuring each piece is well-coated.
  3. Sprinkle chili flakes if desired. Roast in the preheated oven for about 25–30 minutes, turning the carrots halfway through.

Notes

Store leftovers in an airtight container in the fridge for 3–4 days. Reheat in the oven for a few minutes to regain their deliciousness.
