  • 1 lb Carrots Fresh, vibrant carrots; baby carrots can save prep time.
  • 2 tbsp Olive Oil Flavored oil can be used for added depth.
  • 3 tbsp Honey Can be substituted with maple syrup or agave nectar.
  • 2 tbsp Butter Vegan butter works well for a dairy-free alternative.
  • 2 cloves Garlic Minced for best flavor infusion.

Method
 

Preparation
  1. Preheat the oven to 400°F (200°C) to help the carrots caramelize.
  2. If using whole carrots, wash them thoroughly, peel if desired, and cut into uniform pieces for even cooking. Baby carrots can be used directly to save time.
  3. In a mixing bowl, combine the olive oil, honey, melted butter, and minced garlic. Stir until smooth.
  4. Add the cut carrots to the bowl with the sauce and toss until evenly coated.
  5. Line a baking sheet with parchment paper or lightly grease it. Spread the coated carrots in a single layer.
Cooking
  1. Place the baking sheet in the preheated oven and roast the carrots for 25-30 minutes, stirring halfway through.
  2. Check for doneness; the carrots should be tender and slightly caramelized. Test by poking them with a fork.
Serving
  1. Once done, remove the carrots from the oven and transfer them to a serving dish. Garnish with additional honey glaze if desired.

Notes

These roasted carrots pair well with grilled chicken or a hearty plant-based meal. Store leftovers in an airtight container in the refrigerator for up to 3-5 days or freeze for 2-3 months.
