Preparation
- Preheat the oven to 400°F (200°C) to help the carrots caramelize.
- If using whole carrots, wash them thoroughly, peel if desired, and cut into uniform pieces for even cooking. Baby carrots can be used directly to save time.
- In a mixing bowl, combine the olive oil, honey, melted butter, and minced garlic. Stir until smooth.
- Add the cut carrots to the bowl with the sauce and toss until evenly coated.
- Line a baking sheet with parchment paper or lightly grease it. Spread the coated carrots in a single layer.
Cooking
- Place the baking sheet in the preheated oven and roast the carrots for 25-30 minutes, stirring halfway through.
- Check for doneness; the carrots should be tender and slightly caramelized. Test by poking them with a fork.
Serving
- Once done, remove the carrots from the oven and transfer them to a serving dish. Garnish with additional honey glaze if desired.
Notes
These roasted carrots pair well with grilled chicken or a hearty plant-based meal. Store leftovers in an airtight container in the refrigerator for up to 3-5 days or freeze for 2-3 months.
