Preparation
- Preheat the oven to 350°F (175°C) and grease a loaf pan.
- In a large mixing bowl, combine the all-purpose flour, whole wheat flour, rolled oats, brown sugar, baking powder, salt, and baking soda.
- In another bowl, whisk together the vegetable oil, egg, and milk until well combined.
- Gradually add the wet ingredients to the dry ingredients, stirring until just combined. Fold in the mixed seeds and any optional dried fruits or nuts.
- Pour the batter into the prepared loaf pan and smooth the top.
Baking
- Bake in the preheated oven for 35 to 38 minutes, or until a toothpick inserted in the center comes out clean.
- Allow to cool in the pan for 10 minutes before transferring to a wire rack to cool completely. Slice and serve.
Notes
If the top browns too quickly, tent foil over it for the last 10 minutes of baking. This loaf can be frozen for up to 3 months. Cut into slices before freezing for convenience.
