Ingredients
  

Vegetables
  • 2 cups fresh tomatillos Remove from husks and wash thoroughly.
  • 4 cloves Serrano chiles Use 2-3 chiles for a milder sauce.
  • 1/4 cup onion Add to roasting vegetables.
  • 2 cloves garlic Include in roasting.
Others
  • 1/4 cup fresh cilantro Add for flavoring.
  • 1/3 cup water Use for blending.
  • 1 teaspoon salt Adjust to taste.

Method
 

Preparation
  1. Begin by removing the tomatillos from their husks and thoroughly washing them.
  2. Place the washed tomatillos, Serrano chiles, onion, and garlic cloves on a hot comal or griddle set to medium-high heat.
Roasting
  1. Rotate the vegetables until they are roasted and cooked through, enhancing the flavor.
  2. Once roasted, take the ingredients off the heat and allow them to cool.
Blending
  1. Add the cooled roasted ingredients into a blender, along with salt, fresh cilantro, and water.
  2. Blend the mixture until you achieve a chunky consistency.
Serving
  1. Once blended, your Green Sauce is ready to serve over your favorite dishes or store for later use.

Notes

For a healthier variant, use less salt or omit it. You can add lime juice for added freshness. This sauce can pair with grilled meats, tacos, and salads. It can be stored in the refrigerator for up to a week or frozen in ice cube trays.
