Prepare Thyme Syrup
- In a small saucepan, combine water and your preferred sweetener over medium heat. Stir until the sweetener dissolves completely.
- Add the thyme to the saucepan and let it simmer on low heat for about 10 minutes.
- After simmering, remove the saucepan from the heat and allow the syrup to sit for at least 30 minutes or up to 3 hours for a stronger flavor.
- Strain the mixture to remove the thyme leaves and cool the syrup.
Mix Mocktail
- In a glass, add 1 tablespoon of thyme syrup along with 1/2 cup of grapefruit juice.
- Fill the glass with plenty of ice.
- Top the glass with soda water and stir gently.
- Garnish with extra thyme and serve immediately.
Notes
Best served chilled and over ice. This drink pairs perfectly with light appetizers or salads. The thyme syrup can be stored in the fridge for up to one week.
