Ingredients
  

For the refresher base
  • 1.5 cups water Use filtered water for best taste.
  • cup mango nectar Opt for 100% juice for a healthier choice.
  • cup granulated sugar Adjust to taste.
  • 1 tablespoon dragonfruit powder Available in health food stores.
  • ½ teaspoon citric acid Adds a tart flavor.
For the strawberry cold foam
  • 2 tablespoons barista-style oat milk Can substitute with heavy cream.
  • 1.5 tablespoons strawberry syrup Store-bought or homemade.
  • 1 tablespoon soy milk Preferably barista blend for frothing.
For the drink assembly
  • ½ cup sweetened coconut milk Choose full-fat for richer texture.
  • 1 tablespoon freeze-dried dragonfruit pieces For garnish.
  • Ice For a refreshing drink.
  • Pink & green sprinkles Optional for topping.

Method
 

Preparation of Refresher Base
  1. In a medium saucepan, combine water, mango nectar, sugar, dragonfruit powder, and citric acid. Heat over low heat, whisking continuously until melted.
  2. Remove from heat, cool, and transfer to a large jar.
Making Strawberry Cold Foam
  1. In a small mason jar, combine barista-style oat milk, strawberry syrup, and soy milk. Froth with a milk frother until it looks pale and whipped.
Assemble the Drink
  1. In a cocktail shaker or large mason jar with ice, combine ½ cup mango dragonfruit refresher base, ½ cup sweetened coconut milk, and 1 tablespoon freeze-dried dragonfruit. Shake well.
  2. Strain into a tall glass over ice. Stir in more freeze-dried dragonfruit if desired. Top with strawberry cold foam and optional sprinkles.

Notes

Store leftovers in a sealed container in the fridge for 1-2 days. Freeze the refresher base in ice cubes for future use.
