Ingredients

Salad Ingredients
  • 1.5 pounds fresh broccoli, cut into bite-size pieces
  • 1 cup fresh blueberries
  • 1/4 cup thinly sliced red onion
  • 1/2 cup dried cranberries
  • 1/4 cup sunflower seeds
  • 2 large apples, thinly sliced Use fresh lemon juice to prevent browning.
Dressing Ingredients
  • 1 tablespoon lemon juice For the apples
  • 1 cup plain Greek yogurt Lower in added sugar and higher in protein.
  • 1/4 cup honey Can be reduced for a lighter dressing.
  • 1 tablespoon lemon juice For the dressing
  • 2 teaspoons apple cider vinegar
  • 1 tablespoon poppy seeds

Method

Preparation
  1. Combine the broccoli, blueberries, red onion, dried cranberries, and sunflower seeds in a large mixing bowl.
  2. In a separate bowl, toss the sliced apples with the lemon juice to prevent browning, then add them to the salad mixture.
  3. Whisk together the yogurt, honey, lemon juice, apple cider vinegar, and poppy seeds until smooth.
  4. Pour the dressing over the salad and gently mix until everything is evenly coated.
  5. Serve right away or refrigerate until chilled. For best texture, enjoy within one day after dressing the salad.

Notes

Chill the bowl before tossing in warm weather. For a less sweet dressing, cut the honey or use a sugar-free sweetener. The salad is best consumed within 24 hours once dressed.
