Ingredients
  

For the French Toast
  • 4 slices thick bread (like brioche or challah) Thick bread works best for soaking.
  • 2 large eggs Crack and whisk before mixing.
  • 1/2 cup milk Feel free to use dairy-free alternatives.
  • 1 teaspoon vanilla extract Adds flavor to the egg mixture.
  • 1/2 teaspoon ground cinnamon Can sprinkle more for serving.
  • 1 large banana, sliced Freshly sliced as topping.
  • 1/2 cup fresh blueberries Can substitute with frozen, thawed.
  • 1/4 cup walnuts, chopped Add after cooking for crunch.
  • to taste Butter or oil for cooking Use as needed for frying.
  • to taste Maple syrup for serving Optional sweetener.

Method
 

Preparation
  1. In a mixing bowl, crack the eggs and whisk them until blended. Add the milk, vanilla extract, and ground cinnamon. Mix until smooth.
  2. Take one slice of bread and dip it into the egg mixture. Ensure both sides are well-coated. Allow the bread to soak briefly.
Cooking
  1. Heat a frying pan over medium heat and add a little butter or oil. Once hot, place the soaked bread slice into the pan. Cook for about 3-4 minutes until golden brown, then flip and cook for an additional 3-4 minutes.
  2. Repeat with the remaining slices of bread, adding more butter or oil as needed.
Serving
  1. Arrange cooked French toast slices on a plate. Top with sliced bananas, fresh blueberries, and chopped walnuts. Sprinkle extra cinnamon if desired.
  2. Drizzle with maple syrup, if desired, and serve warm.

Notes

Store leftovers in the fridge for up to 2 days. For longer storage, freeze wrapped in plastic for up to a month. Adapt toppings based on availability.
