Ingredients
  

Dough Ingredients
  • 1 cup water
  • 1/2 cup unsalted butter Can substitute with margarine for a lighter version.
  • 1 cup all-purpose flour For a high-protein version, can swap half for almond flour.
  • 1/4 teaspoon salt Adjust to taste.
  • 4 large eggs Bring to room temperature for best results.
  • Vegetable oil for frying Ensure oil is heated to 375°F before frying.
Glazes
  • 1 cup powdered sugar For dusting.
  • 2 tablespoons fruit juice For a fruit glaze.
  • 1 cup powdered sugar For apple cider glaze.
  • 2 tablespoons apple cider
  • 1 cup powdered sugar For chocolate glaze.
  • 2 tablespoons cocoa powder
  • as needed milk Add to thin out the chocolate glaze.
  • 1 cup powdered sugar For maple glaze.
  • 2 tablespoons maple syrup

Method
 

Preparation
  1. In a saucepan, bring water and butter to a boil.
  2. Stir in flour and salt until the mixture forms a ball.
  3. Remove from heat; let cool slightly.
  4. Beat in eggs one at a time until smooth.
Cooking
  1. Heat oil in a deep fryer to 375°F (190°C).
  2. Pipe the dough into cruller shapes into the hot oil, frying until golden brown on both sides.
  3. Drain on paper towels and dust with powdered sugar.
Glazing
  1. For glazes, mix the ingredients for your chosen flavor and dip the cooled crullers into the glaze.

Notes

Cool the dough slightly before adding eggs to prevent scrambling. Use a wide star tip for piping to achieve classic cruller shapes.
