Preparation
- Preheat your oven to 375 degrees F (180 degrees C).
- Spray the mini muffin pan with nonstick cooking spray.
- Roll out the thawed puff pastry sheet on a lightly floured surface and cut it into 24 squares.
- Press each pastry square into the cups of the muffin pan and prick the bottom of each cup with a fork.
- In a mixing bowl, combine mayonnaise, crumbled feta cheese, grated Parmesan cheese, thawed spinach, minced garlic, and black pepper. Mix until well-blended.
- Spoon the filling evenly into each pastry cup.
Baking
- Bake in the preheated oven for 15 to 16 minutes, or until golden brown.
- Let cool in the pan for 5 minutes before transferring to a serving dish.
Notes
These bites are best served warm but can be enjoyed at room temperature. They can also be stored for 4 days in the refrigerator.
