Ingredients
  

For the Pastry Cups
  • 1 sheet frozen puff pastry, thawed Thaw in refrigerator before using.
  • nonstick cooking spray Nonstick cooking spray For greasing the muffin pan.
For the Filling
  • 3/4 cup mayonnaise
  • 1 (6-ounce) container crumbled feta cheese
  • 1/2 cup freshly grated Parmesan cheese
  • 1 (10-ounce) package frozen chopped spinach, thawed and drained
  • 2 cloves garlic, minced
  • 1/4 teaspoon ground black pepper

Method
 

Preparation
  1. Preheat your oven to 375 degrees F (180 degrees C).
  2. Spray the mini muffin pan with nonstick cooking spray.
  3. Roll out the thawed puff pastry sheet on a lightly floured surface and cut it into 24 squares.
  4. Press each pastry square into the cups of the muffin pan and prick the bottom of each cup with a fork.
  5. In a mixing bowl, combine mayonnaise, crumbled feta cheese, grated Parmesan cheese, thawed spinach, minced garlic, and black pepper. Mix until well-blended.
  6. Spoon the filling evenly into each pastry cup.
Baking
  1. Bake in the preheated oven for 15 to 16 minutes, or until golden brown.
  2. Let cool in the pan for 5 minutes before transferring to a serving dish.

Notes

These bites are best served warm but can be enjoyed at room temperature. They can also be stored for 4 days in the refrigerator.
