- Chop the lime into small pieces and muddle it in your glass until the juice is released.
- Clap the mint together in your hands a few times to release the oils. Add the mint to your glass and press down gently with the muddler.
- Fill your glass with ice and add the elderflower syrup or cordial.
- Add the non-alcoholic rum or apple cider vinegar if using.
- Top with soda water or kombucha, stir gently, garnish, and serve.
Notes
Serve in a tall glass filled with ice; garnish with extra mint or edible flowers. Storage: Store leftover mint and lime in the fridge for fresh drinks later. Avoid freezing the mocktail.
