Ingredients
  

Main Ingredients
  • 1 small lime Chopped into small pieces
  • 8-10 leaves mint leaves Fresh mint, clapped to release oils
  • 1 oz elderflower cordial or syrup
  • 1 cup soda water or plain kombucha
  • 1 oz non-alcoholic rum or splash of apple cider vinegar Alternative to non-alcoholic rum
  • Mint, edible flowers, and/or lime for garnish Optional

Method
 

Preparation
  1. Chop the lime into small pieces and muddle it in your glass until the juice is released.
  2. Clap the mint together in your hands a few times to release the oils. Add the mint to your glass and press down gently with the muddler.
  3. Fill your glass with ice and add the elderflower syrup or cordial.
  4. Add the non-alcoholic rum or apple cider vinegar if using.
  5. Top with soda water or kombucha, stir gently, garnish, and serve.

Notes

Serve in a tall glass filled with ice; garnish with extra mint or edible flowers. Storage: Store leftover mint and lime in the fridge for fresh drinks later. Avoid freezing the mocktail.
