Ingredients
  

Dry Ingredients
  • 2 cups almond flour
  • 1/4 cup coconut flour
  • 1/4 cup psyllium husk powder
  • 1 tablespoon baking powder
  • 1 teaspoon salt
Wet Ingredients
  • 4 large eggs
  • 1/2 cup warm water
  • 1/4 cup melted butter or coconut oil Substitute with olive oil for a healthier version.

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C) and line a loaf pan with parchment paper.
  2. In a bowl, mix the almond flour, coconut flour, psyllium husk powder, baking powder, and salt.
  3. In a separate bowl, whisk the eggs and then add warm water and melted butter or coconut oil.
  4. Combine the wet and dry ingredients and mix until a dough forms.
  5. Transfer the dough to the prepared loaf pan and shape it into a loaf.
  6. Bake for 30 to 35 minutes or until the top is golden and a toothpick comes out clean.
  7. Allow to cool before slicing.

Notes

For a balanced snack, pair with nut butter and fresh berries. Store in an airtight container for 5-7 days or freeze slices with parchment in between for longer storage.
