- Place dragonfruit, lime, and sugar into a tall glass and muddle until the juices have released.
- Clap the mint in your hands and add to the glass, pressing down gently.
- Fill the glass with ice, add optional non-alcoholic rum, and top with soda water.
- Stir gently to combine, then garnish with additional dragonfruit, mint, and lime if desired.
For a Punch
- Muddle ingredients in a pitcher, add ice, rum, and soda water, and stir gently.
- Serve over ice with extra lime and mint for garnish.
Notes
For a healthier version, use monkfruit powder or stevia with kombucha. To make a high-protein smoothie version, blend dragonfruit with unsweetened almond milk and protein powder. The mocktail is best fresh but can be stored for up to 24 hours without soda water.
