Ingredients
  

Mocktail Ingredients
  • cup pink dragonfruit (fresh or thawed)
  • 1 small lime, chopped (or half a large lime)
  • 1-2 teaspoons sugar or monkfruit powder (or alternative) For a lower-calorie option, use monkfruit.
  • 10 leaves mint
  • 1 oz non-alcoholic rum (optional)
  • to top cup Soda water (sub with kombucha for probiotic hit)
  • as desired pieces Extra dragonfruit, lime or mint to garnish

Method
 

Preparation
  1. Place dragonfruit, lime, and sugar into a tall glass and muddle until the juices have released.
  2. Clap the mint in your hands and add to the glass, pressing down gently.
  3. Fill the glass with ice, add optional non-alcoholic rum, and top with soda water.
  4. Stir gently to combine, then garnish with additional dragonfruit, mint, and lime if desired.
For a Punch
  1. Muddle ingredients in a pitcher, add ice, rum, and soda water, and stir gently.
  2. Serve over ice with extra lime and mint for garnish.

Notes

For a healthier version, use monkfruit powder or stevia with kombucha. To make a high-protein smoothie version, blend dragonfruit with unsweetened almond milk and protein powder. The mocktail is best fresh but can be stored for up to 24 hours without soda water.
