Preparation
- Preheat the oven to 175°C and lightly spray a 33x23 cm baking dish with non-stick spray.
- In a large skillet, cook the ground beef over heat until no longer pink, then drain any grease. Mix in the taco seasoning if desired.
- Stir in the cheddar cheese soup, cream of chicken soup, chopped green chilies, and evaporated milk until bubbly.
Assembly
- Layer half of the Doritos in the baking dish, crumbling them slightly without crushing into dust.
- Spread half of the beef mixture over the Doritos and sprinkle half of the shredded cheese on top.
- Add the remaining Doritos, followed by the rest of the beef mixture and top with the remaining shredded cheese.
Baking
- Bake in the oven for 20 minutes or until the cheese is gooey and bubbling.
- Let cool for 5 minutes before serving. Add toppings like green onions, salsa, avocado, tomatoes, or sour cream.
Notes
This casserole is best served hot. Leftovers can be refrigerated for up to three days or frozen for two months. Reheat in a microwave or oven.
