Ingredients
  

For the Beef Mixture
  • 700-900 g ground beef Use fresh ground beef for better mixing
  • 30 g taco seasoning Optional, for added flavor
  • 355 ml evaporated milk Provides creaminess
  • 305 g cream of chicken soup For a rich flavor
  • 305 g cheddar cheese soup Adds cheesy goodness
  • 115 g chopped green chilies For some spice
For Assembly
  • 200-300 g shredded Mexican blend cheese Use more or less based on preference
  • 400 g Nacho Cheese Doritos Base of the casserole
  • Salsa to taste For serving
  • Sliced or mashed avocado For topping
  • Cherry tomatoes cut up to taste For added freshness
  • Chopped green onions For garnish

Method
 

Preparation
  1. Preheat the oven to 175°C and lightly spray a 33x23 cm baking dish with non-stick spray.
  2. In a large skillet, cook the ground beef over heat until no longer pink, then drain any grease. Mix in the taco seasoning if desired.
  3. Stir in the cheddar cheese soup, cream of chicken soup, chopped green chilies, and evaporated milk until bubbly.
Assembly
  1. Layer half of the Doritos in the baking dish, crumbling them slightly without crushing into dust.
  2. Spread half of the beef mixture over the Doritos and sprinkle half of the shredded cheese on top.
  3. Add the remaining Doritos, followed by the rest of the beef mixture and top with the remaining shredded cheese.
Baking
  1. Bake in the oven for 20 minutes or until the cheese is gooey and bubbling.
  2. Let cool for 5 minutes before serving. Add toppings like green onions, salsa, avocado, tomatoes, or sour cream.

Notes

This casserole is best served hot. Leftovers can be refrigerated for up to three days or frozen for two months. Reheat in a microwave or oven.
