These soft and sweet cookies made with pastel M&M's and white chocolate are a delightful treat for springtime gatherings.

Ingredients
  

Dry Ingredients
  • 1.5 cups all purpose flour, spooned and leveled Use a spoon to measure to avoid packing.
  • 1 teaspoon baking powder
  • 0.5 teaspoon baking soda
  • 0.25 teaspoon salt
Wet Ingredients
  • 0.5 cup unsalted butter, softened but still cool Do not over-soften.
  • 0.5 cup granulated sugar
  • 0.33 cup brown sugar, lightly packed
  • 1 large egg, cold
  • 2 teaspoons pure vanilla extract
Mix-Ins
  • 0.75 cup Easter/spring M&M's
  • 0.5 cup white chocolate chips or chunks
  • 0.25 cup pastel sprinkles For decoration.

Method
 

Preparation
  1. Preheat oven to 350°F (175°C). Line two baking sheets with parchment paper.
  2. In a bowl, whisk together flour, baking powder, baking soda, and salt.
  3. In another bowl, beat the softened butter and sugars until light and fluffy.
  4. Add the cold egg and vanilla extract, mixing until combined.
  5. On low speed, add the flour mixture and mix until just combined.
  6. Gently stir in the M&M's and white chocolate chips.
  7. Scoop dough, press into sprinkles and place on the prepared baking sheets.
Baking
  1. Bake for 8-11 minutes until edges are set but center is soft.
  2. Cool on wire racks.

Notes

Serve these cookies at room temperature. For a lighter option, pair with Greek yogurt and fresh berries.
