- Cut the hard-boiled eggs in half and remove the yolks.
- In a bowl, combine the egg yolks, mayonnaise, Dijon mustard, Cajun seasoning, hot sauce, salt, and pepper. Mash until smooth and creamy.
- Spoon or pipe the yolk mixture back into the egg whites.
- Sprinkle with paprika and add crispy bacon bits if desired.
- Serve immediately or refrigerate until ready to serve.
Notes
For portion control, serve with veggies or whole-grain crackers. Store leftovers in an airtight container for up to three days in the fridge. Not recommended for freezing.
