Cooking Gnocchi
- In a large pot of boiling salted water, cook the gnocchi according to package instructions. Drain and set aside.
Preparing the Sauce
- In a skillet, heat the olive oil over medium heat. Add minced garlic and sauté for about 30 seconds until fragrant.
- Add the fresh spinach to the skillet and cook until wilted, about 2-3 minutes.
- Pour in the heavy cream and bring it to a simmer. Stir in the crumbled feta cheese until melted and smooth.
Combining and Serving
- Add the cooked gnocchi to the skillet and toss to combine, seasoning with salt and pepper to taste.
- Serve immediately, topped with grated Parmesan cheese if desired.
Notes
Store leftovers in an airtight container in the fridge for up to 3 days. Reheat gently in a skillet and add a splash of cream or water to loosen the sauce. Best served fresh.
