  • 16 oz cottage cheese Good Culture brand recommended
  • 1 packet taco seasoning
  • 1 cup freshly shredded pepper jack cheese For best texture, use fresh cheese
  • 1 cup freshly shredded cheddar cheese For best texture, use fresh cheese
  • 2.25 oz black olives, drained and chopped Small can
  • 1/4 cup fresh cilantro, chopped
  • 1 small red bell pepper, finely diced
  • 2-3 pieces pickled jalapeƱos, minced Adjust for desired heat

Method
 

Preparation
  1. Add cottage cheese and taco seasoning to a large mixing bowl and stir until well combined.
  2. Fold in freshly shredded pepper jack and cheddar cheese.
  3. Gently fold in black olives, chopped cilantro, diced red bell pepper, and minced pickled jalapeƱos.
  4. Mix until everything is evenly distributed throughout the dip.
  5. Chill in refrigerator for at least 1 hour before serving.
  6. Let come to room temperature for 10 minutes before serving if chilled for several hours.

Notes

Store in an airtight container in the fridge for up to 4 days. Freezing is not recommended for best texture.
