Ingredients
  

Cranberry-Orange Topping
  • 12 ounces fresh or frozen cranberries
  • 0.5 cup granulated sugar Reduce for a healthier version
  • 1 tablespoon orange zest
  • 0.25 cup fresh orange juice
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon ground cinnamon
  • pinch salt
Brie Assembly
  • 1 sheet puff pastry, thawed
  • 1 (8-ounce) wheel brie cheese
  • 1/4 to 1/2 cup chopped pecans or walnuts
  • 1 to 2 tablespoons honey
  • 1 egg beaten (for egg wash)
  • 1 tablespoon coarse sugar (optional)
For Serving
  • Assorted crackers
  • Toasted baguette slices

Method
 

Prepare Topping
  1. In a small saucepan over low heat, combine the cranberries, sugar, orange zest, orange juice, vanilla extract, cinnamon, and salt. Cook for 5 to 8 minutes until thickened, then cool completely.
Assemble and Bake
  1. Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper and unfold puff pastry onto the sheet.
  2. Place brie in center, top with 1/2 cup cranberry mixture, drizzle with honey, and sprinkle with nuts.
  3. Fold pastry over brie, seal seams, flip seam-side down. Brush with egg wash and sprinkle with coarse sugar.
  4. Bake for 25 to 28 minutes until golden brown.
  5. Rest for 5 minutes before serving with crackers and baguette.

Notes

For a lighter option, serve in small portions with fresh fruit or whole grain crackers. This dish can be made ahead; simply prepare the cranberry topping and bake the brie just before serving.
