Prepare Topping
- In a small saucepan over low heat, combine the cranberries, sugar, orange zest, orange juice, vanilla extract, cinnamon, and salt. Cook for 5 to 8 minutes until thickened, then cool completely.
Assemble and Bake
- Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper and unfold puff pastry onto the sheet.
- Place brie in center, top with 1/2 cup cranberry mixture, drizzle with honey, and sprinkle with nuts.
- Fold pastry over brie, seal seams, flip seam-side down. Brush with egg wash and sprinkle with coarse sugar.
- Bake for 25 to 28 minutes until golden brown.
- Rest for 5 minutes before serving with crackers and baguette.
Notes
For a lighter option, serve in small portions with fresh fruit or whole grain crackers. This dish can be made ahead; simply prepare the cranberry topping and bake the brie just before serving.
