Cranberry Brie Puff Pastry Bites

Ingredients
  

Main Ingredients
  • 1 tablespoon salted butter, melted
  • 2 cups fresh cranberries
  • 2 to 4 tablespoons brown sugar
  • 1/4 teaspoon ground cinnamon
  • 2 sheets frozen puff pastry, thawed
  • 16 ounces Brie cheese, cut into 24 slices
  • 1/3 cup fig preserves
  • 1 large egg, beaten
  • 1 tablespoon coarse sugar
  • 1 tablespoon fresh thyme leaves

Method
 

Preparation
  1. Preheat oven to 425°F and line a baking sheet with parchment paper.
  2. Combine melted butter, cranberries, brown sugar, and cinnamon in a bowl.
  3. Roll out puff pastry and cut each sheet into 6 rectangles.
Assembly
  1. Spread fig preserves in the center of each rectangle.
  2. Top with 2 slices of Brie.
  3. Spoon cranberry mixture over Brie and press gently.
  4. Fold edges slightly inward.
  5. Brush edges with beaten egg and sprinkle with coarse sugar.
Baking
  1. Bake for 15 to 20 minutes until golden and puffed.
  2. Sprinkle with fresh thyme and serve warm.

Notes

Best served warm right from the oven. For a lighter version, reduce brown sugar and use smaller pastry squares. These bites can also be paired with a warm spiced coffee.
