- Cut the hard-boiled eggs in half and scoop out the yolks into a mixing bowl.
- Add the cottage cheese, mayonnaise, and Dijon mustard to the yolks and mix until smooth.
- Season with salt and pepper to taste.
- Spoon or pipe the mixture back into the halved egg whites.
- Sprinkle with paprika and fresh chives before serving.
Notes
These deviled eggs can be stored in an airtight container in the refrigerator for up to 3 days. Best enjoyed fresh. Freezing is not recommended due to texture changes.
