  • 1 cup jasmine rice Cook separately according to package instructions.
  • 2 cups chicken broth Can be swapped with vegetable broth for a vegetarian option.
  • 1 piece onion, chopped Adds sweetness and flavor.
  • 2 cloves garlic, minced Enhances the dish's aroma and flavor.
  • Salt and pepper to taste Adjust according to preference.
  • Fresh cilantro for garnish Optional, for flavor and decoration.

Method
 

Preparation
  1. Heat olive oil in a pan over medium heat.
  2. Add chopped onion and minced garlic, cooking until softened.
  3. Season chicken breasts with salt and pepper, then add to the pan, cooking until golden brown on both sides.
Cooking
  1. Pour in coconut milk and chicken broth, bringing to a simmer.
  2. Cover and cook for about 15-20 minutes, or until the chicken is cooked through.
  3. In a separate pot, prepare jasmine rice according to package instructions.
  4. Serve the chicken over a bed of rice, garnished with fresh cilantro.

Notes

For added coconut flavor, brush homemade coconut syrup over the rice. Serve with lime wedges for a zesty lift.
