Preparation
- Place butterfly pea flowers in boiling water and steep for 30 minutes.
- Strain flowers and freeze the blue liquid into ice cubes.
- Freeze the regular cold water into ice cubes.
- Once frozen, blend the blue ice cubes in a high-speed blender, leaving some larger chunks for texture.
- Do the same with the regular ice cubes.
Drink Assembly
- Fill tall glasses halfway with regular ice.
- Top with butterfly pea ice.
- Add 1 tablespoon of citrus juice into each glass.
- Add more butterfly pea ice on top and finish with your favourite sparkling beverage.
- Stir gently and garnish before serving.
Notes
Use fresh citrus for the best flavor and enjoy immediately for the best fizz and color. Store ice cubes in airtight containers to keep them fresh.
