A cozy, delicious Starbucks copycat frappuccino made with oat milk, cold brew coffee, and a delightful cinnamon crumble topping.

Ingredients
  

For the Cookie Topping
  • ¼ cup crushed Nilla wafers (or dairy-free vanilla cookie of choice)
  • ¾ tsp cinnamon
  • 1 tbsp unsalted butter Melted
  • 1 tsp granulated sugar
For the Frappuccino
  • 1 cup ice
  • ½ cup cold brew coffee
  • ½ cup oat milk
  • 3 tbsp toasted cinnamon syrup
  • ¼ tsp cinnamon
  • ¼ tsp xanthan gum Optional, for thickness
  • to taste Whipped cream Optional for garnish

Method
 

Preparation of Cookie Topping
  1. In a small bowl, stir together the crushed Nilla wafers and cinnamon.
  2. In a small skillet over medium heat, melt the butter.
  3. Once the butter is melted, stir in the cookie mixture and cook for an additional 2-3 minutes until golden brown.
  4. Remove from heat and mix in the granulated sugar. Set aside.
Making the Frappuccino
  1. Add the ice to a high-speed blender.
  2. Pour in the cold brew coffee, oat milk, toasted cinnamon syrup, ground cinnamon, and xanthan gum.
  3. Blend until smooth with no ice chunks remaining.
Serving
  1. Pour the frappuccino into a tall glass.
  2. Top with whipped cream and sprinkle the cinnamon crumble topping over it, if desired.

Notes

Best enjoyed fresh, as the texture may change when stored. Store any leftovers in an airtight container in the refrigerator, and keep the crumble topping separate at room temperature.
