  • 200 g dark chocolate (chopped)
  • 100 g butter (unsalted) Greased for skillet preparation
  • 200 g sugar
  • 3 large eggs
  • 100 g plain flour
  • 1 tsp vanilla extract
  • 200 g sour cherries (fresh or canned)
  • 1 pinch salt To enhance flavor

Method
 

Preparation
  1. Preheat your oven to 180°C (350°F) and grease your skillet with a bit of butter.
  2. In a small saucepan, melt the chopped dark chocolate and butter over low heat until smooth. Remove from heat and let cool slightly.
  3. In a large mixing bowl, combine the melted chocolate mixture with the sugar and mix well.
  4. Beat the eggs in a separate bowl, then add them to the chocolate mixture, mixing until fully combined.
  5. In another bowl, mix the plain flour and salt together, then slowly add to the wet mixture, stirring until just combined.
  6. Stir in the vanilla extract and gently fold in the sour cherries.
Baking
  1. Pour the brownie batter into the prepared skillet and bake for about 25-30 minutes until edges are set and a toothpick inserted in the center comes out with a few moist crumbs.
  2. Remove from the oven and let cool for a few minutes before cutting into pieces.

Notes

Serve warm with ice cream or dust with powdered sugar. Leftovers can be stored at room temperature for up to 3 days or frozen for up to 2 months.
