Chili Garlic Sauce

Ingredients
  

Chili Ingredients
  • 8 ounces Fresno chiles (about 10 chiles) Remove stems and chop for blending.
  • 2 pieces jalapeños Adjust quantity for desired spiciness.
  • 2 heads garlic Peeled and prepared for blending.
Other Ingredients
  • 1 teaspoon salt Can be substituted with lemon juice for a healthier version.
  • cup California champagne vinegar Adds acidity to the sauce.

Method
 

Preparation
  1. Remove the stems from the chiles and chop them into 2 or 3 pieces each.
  2. Peel the garlic cloves and have them ready for blending.
Blending
  1. Combine all the chopped chiles, garlic, salt, and vinegar into a blender.
  2. Blend the ingredients for about 20 seconds.
  3. Remove ¼ cup of the puree and set it aside.
  4. Continue to blend the remaining mix until mostly smooth, about 45 seconds more.
  5. Pour the blended sauce into a container and stir in the reserved puree for a slightly chunkier texture.
Storage
  1. Seal the container and refrigerate. Your homemade chili garlic sauce can be stored for up to a month.

Notes

This sauce is great as a dip, marinade, or topping. Store in an airtight container for up to a month or freeze portions for later use.
