Ingredients
  

For the crust
  • 20 ounces refrigerated hash browns
  • 2 tablespoons ranch seasoning mix
For the filling
  • 1/4 cup cooked bacon, diced
  • 2 large eggs, beaten
  • 1 cup shredded parmesan cheese
  • 18 large eggs
  • 1 teaspoon kosher salt
  • 1/2 teaspoon black pepper
  • 1 1/2 cups 2 percent milk
  • 20 pieces pre-cooked breakfast sausage links, cut into bite-size pieces
  • 2 cups shredded cheddar cheese

Method
 

Preparation
  1. Preheat oven to 450 degrees F. Grease a 9×13 baking dish and set aside.
  2. In a large bowl, mix hash brown crust ingredients and press into the bottom and sides of the baking dish.
  3. Bake for 15-18 minutes until the edges start to brown.
Filling
  1. In the same bowl, whisk together eggs, milk, salt, and pepper, then stir in sausage pieces and 1 cup of shredded cheese.
  2. Pour filling into the baked hash brown crust and bake for 30 minutes.
  3. Sprinkle remaining cheese on top and bake an additional 15-20 minutes until eggs are set.
  4. Remove from oven, serve warm, and enjoy!
  5. Let the casserole sit for 8 to 10 minutes before cutting.

Notes

Store leftover casserole in an airtight container for up to 4 days. If freezing, cut into portions and store in freezer-safe containers. Thaw overnight before reheating.
