  • 1 head cauliflower, cut into florets
  • 2 cups shredded cheese (such as cheddar or a mix)
  • 2 tablespoons butter
  • 2 tablespoons all-purpose flour Substitute with gluten-free flour for gluten-free version.
  • 2 cups milk
  • to taste salt
  • to taste pepper
  • optional breadcrumbs for topping For a crunchy topping.

Method
 

Preparation
  1. Preheat your oven to 375°F (190°C).
  2. Cook the cauliflower florets in boiling water for about 5-7 minutes until tender, then drain.
  3. In a saucepan, melt the butter over medium heat. Stir in the flour and cook for 1 minute.
  4. Gradually whisk in the milk, stirring constantly until the sauce thickens.
  5. Remove from heat and stir in 1 ½ cups of cheese until melted. Season with salt and pepper.
  6. Combine the cauliflower with the cheese sauce and pour into a baking dish.
  7. Sprinkle remaining cheese and breadcrumbs on top if using.
Baking
  1. Bake in the preheated oven for 20-25 minutes or until golden and bubbly.

Notes

For a healthier version, reduce the cheese to 1 cup and add nutritional yeast. This dish is great for meal prep and can be stored in an airtight container in the refrigerator for up to 3 days or frozen for up to 3 months.
