Preparation
- Preheat your oven to 375°F (190°C).
- Cook the cauliflower florets in boiling water for about 5-7 minutes until tender, then drain.
- In a saucepan, melt the butter over medium heat. Stir in the flour and cook for 1 minute.
- Gradually whisk in the milk, stirring constantly until the sauce thickens.
- Remove from heat and stir in 1 ½ cups of cheese until melted. Season with salt and pepper.
- Combine the cauliflower with the cheese sauce and pour into a baking dish.
- Sprinkle remaining cheese and breadcrumbs on top if using.
Baking
- Bake in the preheated oven for 20-25 minutes or until golden and bubbly.
Notes
For a healthier version, reduce the cheese to 1 cup and add nutritional yeast. This dish is great for meal prep and can be stored in an airtight container in the refrigerator for up to 3 days or frozen for up to 3 months.
