Ingredients
  

Herbs and Vegetables
  • 3 oz Cilantro, leaves and stems 1 bunch
  • 2 oz Italian parsley 1/2 bunch
  • 8 pieces Pimento seeds, crushed
  • 1 piece Scotch bonnet pepper, seeded
  • 1 stalk Celery stalk with leaves
  • 1 bunch Fresh thyme leaves
  • 1/2 piece Red bell pepper, chopped
  • 3/4 cup Fresh lime juice
  • 1 inch Fresh ginger, peeled
  • 8 cloves Garlic cloves, peeled
  • 6 pieces Green onions, chopped
  • 1 teaspoon Salt

Method
 

Preparation
  1. Begin by removing the stems from the cilantro and parsley. Chop the vegetables roughly, including the red bell pepper and celery.
  2. Place all the ingredients into a food processor, including the chopped herbs, celery, red bell pepper, crushed pimento seeds, Scotch bonnet pepper, fresh thyme, lime juice, ginger, garlic, green onions, and salt.
  3. Pulse the ingredients until you reach your desired consistency. If you like it chunky, process it less; if you prefer it smooth, process it a bit longer.
  4. Once done, transfer the Caribbean Green Seasoning to a container or jar.
Storage
  1. Keep it in the fridge for up to a week or freeze it for up to three months for longer storage.

Notes

To store your Caribbean Green Seasoning, keep it in an airtight container in the refrigerator. It will stay fresh for about a week. For longer storage, pour the mixture into ice cube trays, freeze it, then pop out the cubes and store them in a freezer bag.
