Caramel Apple Jam

Ingredients
  

Main Ingredients
  • 6 cups apples, peeled and diced Any variety of apples can be used.
  • 1/2 cup water
  • 1 teaspoon butter
  • 1/2 teaspoon ground cinnamon
  • 1 package powdered fruit pectin (1.75 ounces)
  • 3 cups sugar
  • 2 cups brown sugar, packed

Method
 

Preparation
  1. Start by peeling and dicing your apples to yield about 6 cups of diced apples.
Cooking
  1. In a large pot, combine the diced apples, water, butter, and cinnamon. Cook over low heat, stirring gently, until the apples become tender (about 10 minutes).
  2. Once the apples are soft, sprinkle in the powdered fruit pectin and stir well. Bring the mixture to a boil.
  3. Add the sugar and brown sugar, stirring continuously until dissolved. Cook for about 1 minute.
  4. Turn off the heat and skim off any foam from the surface.
Jarring and Processing
  1. Carefully spoon the warm apple mixture into clean mason jars, filling them to about 1/2 inch from the top. Seal jars with lids.
  2. Bring a large pot of water to a boil and place the filled jars inside. Simmer for about 10 minutes to seal properly.
  3. Remove jars from the water and turn them upside down for a few minutes before storing them upright.

Notes

Store in a cool, dark place for up to a year. Once opened, keep in the refrigerator for 2-3 weeks.
