Preparation
- Start by peeling and dicing your apples to yield about 6 cups of diced apples.
Cooking
- In a large pot, combine the diced apples, water, butter, and cinnamon. Cook over low heat, stirring gently, until the apples become tender (about 10 minutes).
- Once the apples are soft, sprinkle in the powdered fruit pectin and stir well. Bring the mixture to a boil.
- Add the sugar and brown sugar, stirring continuously until dissolved. Cook for about 1 minute.
- Turn off the heat and skim off any foam from the surface.
Jarring and Processing
- Carefully spoon the warm apple mixture into clean mason jars, filling them to about 1/2 inch from the top. Seal jars with lids.
- Bring a large pot of water to a boil and place the filled jars inside. Simmer for about 10 minutes to seal properly.
- Remove jars from the water and turn them upside down for a few minutes before storing them upright.
Notes
Store in a cool, dark place for up to a year. Once opened, keep in the refrigerator for 2-3 weeks.
