Ingredients
  

Herb Mixture
  • 2 cloves fresh garlic, minced Use finely minced garlic for better blend.
  • 1/2 teaspoon dried oregano
  • 1/4 teaspoon red pepper flakes Adjust according to spice preference.
  • 1/2 teaspoon dried basil
  • 1/2 teaspoon fresh rosemary or dried If using fresh, chop finely.
  • 1/2 teaspoon kosher salt Salt to taste.
  • to taste ground pepper fresh ground pepper Use freshly ground for best flavor.
  • 1/2 cup extra virgin olive oil Add more as desired.

Method
 

Preparation
  1. Using a mortar and pestle (or a small bowl), combine half of the minced garlic and herbs and crush them together until well blended.
  2. Repeat the process with the remaining half of the garlic and herbs.
  3. Transfer the crushed mixture to a small bowl and add the olive oil.
  4. Taste and adjust salt or pepper as needed, then let rest for about 10 minutes to blend flavors.
  5. If you do not have a mortar and pestle, finely mince the garlic and stir everything together in a bowl.

Notes

Store the dip in an airtight container in the fridge for up to 5 to 7 days. Do not freeze the oil mixture as it can change texture. For portion control, serve 1 to 2 tablespoons per serving.
