Preparation
- Wash and slice the peaches. Remove the pit and cut the fruit into thin slices. Muddle a few slices gently in a bowl to release juices.
- Boil 4 cups of water. Remove from heat and add tea bags. Let steep for 5 to 10 minutes, then remove tea bags and let the tea cool slightly.
- In a heatproof pitcher, add the peach slices, peach puree (if using), and sugar or sweetener. Pour the hot tea over the peaches and stir until the sweetener dissolves. Taste and adjust sweetness.
- Add 4 cups of cold water to the pitcher. Stir to combine. Let the tea chill in the fridge for at least 1 hour so the peach flavor deepens.
Serving
- Just before serving, add bourbon to the chilled tea and stir. Add ice to glasses and pour. Garnish with lemon and mint if desired.
- For a non-alcoholic or lighter option, skip the bourbon or use a small splash of peach juice instead.
Storage
- Store your iced tea in a covered pitcher in the fridge for up to 3 to 4 days if you have not added bourbon. If you have already mixed in bourbon, use within 24 to 48 hours for best taste.
- Do not freeze the tea with ice or garnish; frozen fruit can be added to a blended drink instead.
Notes
Serve this tea cold in tall glasses with plenty of ice. For portion control, pour 6 to 8 ounce servings. If you add bourbon, limit to one standard drink per serving (about 1.5 ounces bourbon per 8-ounce glass) to keep it a lighter option.
