Preparation
- Line an 8-inch square baking pan with parchment paper and spray with non-stick cooking spray.
- Preheat the oven to 350 degrees F.
- In a medium mixing bowl, combine yellow cake mix, lemon pudding mix, lemon juice, eggs, and lemon zest using an electric hand mixer.
- Pour the batter into the prepared baking pan and spread it evenly with a spatula.
Baking
- Bake for 22-24 minutes or until a toothpick inserted into the center comes out clean.
- Let the brownies cool in the pan for 10 minutes, then lift them out using the parchment paper and cool completely.
Glazing and Serving
- For the glaze, whisk together powdered sugar and lemon juice in a bowl until smooth. Adjust consistency with more lemon juice if necessary.
- Once the brownies have cooled, slice them into squares, drizzle the glaze on top, and sprinkle with lemon zest.

Serve at room temperature for best texture. For a richer treat, top with vanilla ice cream or whipped cream. Store in an airtight container for up to 3 days.
