  • 15.25 ounces yellow cake mix
  • 3.4 ounces lemon instant pudding mix
  • 1/3 cup fresh lemon juice Plus 1 tablespoon for glaze
  • 3 large eggs
  • 1 teaspoon lemon zest
Glaze Ingredients
  • 1 cup powdered sugar
  • 1 tablespoon lemon juice More if needed for desired consistency

Method
 

Preparation
  1. Line an 8-inch square baking pan with parchment paper and spray with non-stick cooking spray.
  2. Preheat the oven to 350 degrees F.
  3. In a medium mixing bowl, combine yellow cake mix, lemon pudding mix, lemon juice, eggs, and lemon zest using an electric hand mixer.
  4. Pour the batter into the prepared baking pan and spread it evenly with a spatula.
Baking
  1. Bake for 22-24 minutes or until a toothpick inserted into the center comes out clean.
  2. Let the brownies cool in the pan for 10 minutes, then lift them out using the parchment paper and cool completely.
Glazing and Serving
  1. For the glaze, whisk together powdered sugar and lemon juice in a bowl until smooth. Adjust consistency with more lemon juice if necessary.
  2. Once the brownies have cooled, slice them into squares, drizzle the glaze on top, and sprinkle with lemon zest.

Notes

Serve at room temperature for best texture. For a richer treat, top with vanilla ice cream or whipped cream. Store in an airtight container for up to 3 days.
