  • 1 cup Cherry tomatoes, sliced
  • 1 cup Cucumber, diced
  • 1/2 cup Red onion, thinly sliced
  • 1 medium Avocado, diced
Toppings
  • 1/2 cup Goat cheese, crumbled
  • 1/2 cup Toasted nuts (walnuts or pecans)
Dressing
  • 1/4 cup Balsamic vinaigrette Store-bought or homemade

Preparation
  1. In a large bowl, combine mixed greens, sliced cherry tomatoes, diced cucumber, thinly sliced red onion, and diced avocado.
  2. Crumble goat cheese over the top.
