  1. In a saucepan, melt the butter over medium heat.
  2. Stir in the flour and cook for about 1-2 minutes, until bubbly and light in color.
  3. Gradually whisk in the milk, ensuring there are no lumps.
  4. Cook, stirring constantly, until the sauce thickens (about 5-7 minutes).
  5. Season with salt and nutmeg, if desired.
  6. Remove from heat and use as needed.

Notes

To store, cool the sauce to room temperature and keep it in an airtight container in the fridge for 3 to 4 days. Reheat gently over low heat, adding milk if it thickens too much. Freezing is possible but may alter the texture.
