Preparation
- Preheat your oven to 190°C.
- In a large mixing bowl, toss the diced zucchinis, diced green bell pepper, chopped onion, and halved grape tomatoes with olive oil, garlic powder, Italian herbs blend, salt, and black pepper.
- Transfer the mixed veggies into a 23x33 cm baking dish and level them out.
- Mix half of the shredded mozzarella cheese into the veggies.
Baking
- Bake the dish in the preheated oven for 20 minutes.
- After 20 minutes, take the dish out and add the remaining mozzarella cheese on top.
- Return the baking dish to the oven for an additional 10 minutes to melt the cheese.
Serving
- Remove the dish from the oven and, if desired, sprinkle fresh parsley and red chili flakes over it.
- Serve hot.
Notes
This dish can be served warm or at room temperature. Leftovers can be stored tightly covered in the refrigerator for 3 to 5 days. It can also be frozen for up to three months.
