Baked Zucchini and Cheese

Ingredients
  

Vegetables
  • 2 big big zucchinis, diced up
  • 1 cup grape tomatoes, cut in half
  • 1 onion, chopped up
  • 1 cup green bell pepper, diced
Seasonings
  • 1 tablespoon chopped parsley, fresh
  • 1/2 teaspoon red chili flakes, crushed Optional for heat
  • 1 teaspoon cracked black pepper, fresh
  • 1/2 teaspoon salt
  • 1 teaspoon Italian herbs blend
  • 1 teaspoon garlic powder
  • 2 tablespoons olive oil
Cheese
  • 1 cup mozzarella, shredded and split up

Method
 

Preparation
  1. Preheat your oven to 190°C.
  2. In a large mixing bowl, toss the diced zucchinis, diced green bell pepper, chopped onion, and halved grape tomatoes with olive oil, garlic powder, Italian herbs blend, salt, and black pepper.
  3. Transfer the mixed veggies into a 23x33 cm baking dish and level them out.
  4. Mix half of the shredded mozzarella cheese into the veggies.
Baking
  1. Bake the dish in the preheated oven for 20 minutes.
  2. After 20 minutes, take the dish out and add the remaining mozzarella cheese on top.
  3. Return the baking dish to the oven for an additional 10 minutes to melt the cheese.
Serving
  1. Remove the dish from the oven and, if desired, sprinkle fresh parsley and red chili flakes over it.
  2. Serve hot.

Notes

This dish can be served warm or at room temperature. Leftovers can be stored tightly covered in the refrigerator for 3 to 5 days. It can also be frozen for up to three months.
